Wata Kame in Miyagawa-chō has been cooking Kyoto kaiseki since 1864, passed down through five generations. Tucked into one of Kyoto’s historic geisha districts, it pairs the charm of old townhouses with a stubborn devotion to flavor—seasonal mountain and sea ingredients arriving from across Japan, shaped by delicate dashi and careful pacing. Downstairs, seven seats line a warm hinoki-wood counter where you can watch each course take form; upstairs, private rooms make it easy to dine with family. Classic at heart, the kitchen isn’t afraid of small surprises that make kaiseki feel fresh again.
